Dried mantis shrimps (about 12 pcs)
Taro 1/2 pc
Rice 4 bowls
Celery 2 stalks
Egg 2 pcs
Spring onion 1 pc
Carrot 1/4 pc
Seasoning:
Fish sauce or soy sauce 1 tablespoon
Pepper powder adequate amount
Salt adequate amount
Vegetable oil 2 tablespoons
1. Dice celery, taro and red carrot; chop spring onion. Soak dried mantis shrimps in water for 10-15 minutes until soft, drain for later use.
2. Add oil in a pan and stir-fry dried mantis shrimp, taro and celery until fragrant; blanch red carrot and drain.
3. Beat the eggs, pour them into the same pan, stir quickly until it thickens. Turn off the fire, add in rice and sauté quickly at mild heat, add in fish sauce and mix evenly. Season with a little salt and pepper powder and stir-fry evenly (It is best to have every grain coated with egg sauce). Add in celery to sauté, then dried mantis shrimps and carrots into the mixture. Sauté well and finally, add in taro, stir-fry a while, sprinkle some spring onions and serve.
