Siu mai is a universally beloved local street food in Hong Kong. Local dace fish siu mai is less greasy than traditional pork siu mai, making it an ideal choice for seniors and a healthy option for children. Beyond simply steaming and serving, a little creativity can transform ready-made dace fish siu mai into a stunning, restaurant-worthy dish. Today, we share this elevated recipe using dace fish siu mai so you can easily recreate gourmet meals at home.
Ingredients:
1. Local Dace Fish Siu Mai: 12 pieces
2. Spring Roll Wrappers: 12 sheets
3. Egg: 1 whole (beaten)
4. White Sesame Seeds: 2 tbsp
5. Cooking Oil: As needed for deep-frying
Special Sauce Ingredients:
1. Oyster Sauce: 1 tbsp
2. Honey: 2 tsp
3. Minced Garlic: 1 tsp
4. Lemon Juice: ½ tsp
5. Water: 3 tbsp
Instructions:
1. Steam the dace fish siu mai until heated through, then allow them to cool. Pat the surface completely dry with paper towels.
2. Wrap each dace fish siu mai in a spring roll wrapper into a candy-shaped package, using the beaten egg wash to seal the edges.
3. Brush the surface of each wrapped package with egg wash and sprinkle with white sesame seeds.
4. Heat cooking oil to 160°C. Deep-fry the wrapped dace fish siu mai for about 2–3 minutes until the exterior turns golden brown and crispy.
5. Prepare the sauce: Place all sauce ingredients in a small saucepan and simmer over low heat until thickened.
6. Plating: Decoratively brush or drizzle the sauce onto the serving plate, arrange the fried dace fish siu mai on top, and garnish with fresh herbs if desired.
