【煮食方式】
麻辣滷牛腱冷盤佐蔥油拌麵
材料：麻辣滷牛腱6件、幼蛋麵2個、青瓜半條（切絲）、蔥花適量。
蔥油醬：蔥白末2湯匙、生抽1湯匙、麻油1茶匙、滷汁2湯匙。
步驟：
1. 準備牛腱：提前一天將真空包移至冷藏庫解凍。食用前燒滾一鍋水，熄火後放入整包牛腱浸泡10分鐘。
2. 處理麵條：另煮一鍋沸水，放入幼蛋麵煮2-3分鐘至彈牙，撈起過冷河，瀝乾後鋪於碟中，旁邊放上青瓜絲。
3. 製作蔥油醬：將蔥白末放入碗中，燒熱1湯匙油淋上，再加入生抽、麻油及2湯匙滷汁拌勻。
4. 組合上菜：將翻熱後的牛腱切成薄片，鋪於麵上，淋上蔥油醬，撒上蔥花即可享用。
