【煮食方式】
古法頭抽蒸海上鮮
材料:新鮮海魚 1條(約600g,如鱸魚、黃花魚)、順發孖記古法頭抽 3湯匙、薑 5片(切絲)、蔥 2條(切絲)、芫荽 1棵(切段)、砂糖 ½茶匙、食用油 2湯匙、滾油 1湯匙
步驟:
1. 海魚清洗乾淨,抹乾水分,在魚身兩面斜劃三刀
2. 將薑絲一半鋪在碟底,放上魚,再鋪上剩餘薑絲
3. 蒸鍋水滾後,放入魚以大火蒸8-10分鐘(視魚身厚度調整)
4. 取出倒掉碟中多餘水分,撒上蔥絲及芫荽段
5. 小碗混合頭抽與砂糖,淋在魚身周圍(避免直接淋在魚身影響美觀)
6. 將食用油加熱至微煙,均勻淋在蔥絲上激發香氣,最後淋上滾油增添光澤
