【煮食方式】
金銀蒜蒸黃鱲鯧
材料：本地優質東龍黃鱲鯧1條、蒜頭8-10瓣、蔥1條（切絲）、薑3片（切絲）、蒸魚豉油2湯匙、砂糖半茶匙、麻油1茶匙、食用油適量

步驟：
1. 將黃鱲鯧解凍後清洗，用廚房紙巾吸乾水分，在魚身兩面各斜劃兩刀。
2. 將一半蒜頭切成蒜蓉，另一半保留原粒。燒熱少量油，將蒜蓉炸至金黃成「金蒜」，原粒蒜則為「銀蒜」。
3. 將薑絲鋪在碟上，放上黃鱲鯧，表面均勻撒上金蒜、銀蒜及部分蔥絲。
4. 蒸鍋水滾後，放入魚以大火蒸約8-10分鐘（視魚身厚度調整），用筷子能輕易穿透魚肉即熟。
5. 取出後倒去多餘水分，淋上混合蒸魚豉油、砂糖及麻油的醬汁，撒上剩餘蔥絲，最後澆上熱油提香即可。
