Dried whitebait about 2 taels (= 75 g)
Star snapper 1 pc (about 1 catty = 600 g)
Ginger 3 slices
Spring onion 1 pc
Seasoning:
Sugar 2 teaspoons
Premium soy sauce 2 tablespoons
Vegetable oil 1-1/2 tablespoons
1. Clean Star snapper and then wipe dry. Shred spring onion and ginger. Soak dried whitebait in water for 10 minutes until soft and drain.
2. Place dried whitebait on star snapper on a plate. Add ginger and half portion of spring onion. Steam about 8-10 minutes.
3. Mix sugar and premium soy sauce together and bring it to a boil. Pour the sauce over the fish. Add more shredded spring onions and then boil some oil to pour over. Serve.
